Lord Mayor of Cork Councillor Joe Kavanagh laid a wreath at a ceremony at Fitzgerald's Park.
President Michael D Higgins and Taoiseach Micheal Martin attended an event at Collins Barracks in Dublin.
Religious leaders from all denominations led prayers at the service.
There were also commemorations in Galway, Kilkenny, Limerick and Waterford.
